Coconut cupcakes and a weekend of food

It's been years since I've done any baking, but after being inspired by Milly's blogposts, I decided it was about time I gave it another go!

After a quick Google search, I came across this website, where I spied a rather yummy looking recipe for coconut cupcakes. I adapted the recipe to make it more coconutty, and omitted the salt, but otherwise it remains very similar:

1/2 cup + 1 teaspoon sugar
4 eggs
3/4 cup coconut cream
3/4 cup self rising flour


In one bowl, whisk together the egg whites with a teaspoon of sugar, until stiff peaks
form. Mix together all the other ingredients in another bowl. Finally, fold the 2 mixes
together, dish up into cupcake cases and bake at gas mark 4 for 20minutes.

For the icing, I mixed together the rest of the coconut cream with plenty icing sugar
and a few drops of water.

As you can see, my icing skills needs some improvement, and the cupcakes could have been a little lighter in texture, but on the whole, I'm really pleased with how they turned out.

Much of my time this weekend has been spent eating out, whilst catching up with old friends and celebrating birthdays. Here are some photos:

  4. Loving the cupcakes!! I haven't baked cupcakes in so long. You've inspired me to dig out the baking utensils again!! I've had an issue with the cupcakes not being fluffy enough, but I think whisking the eggs and folding in the flour quickly should do the trick. It avoids any air from escaping. Hope this helps!! Xx

    1. Thanks for the tip, I was beating with a fork so that may well be why! I shall have to invest in an electric whisk if I want to carry on baking. Have fun making cupcakes x
